A dry white wine produced from 36% Roussanne, 28% Grenache Blanc, 20% Clairette Blanche, and 16% Viognier from several plots in Yatir Forest, created from a blend of the best white wines of the vintage year. The wine fermented and aged for around seven months in large 500 litres (132 gallons) oak and acacia wooden barrels. Bottled in May 2022.

2021 Vintage:
The 2021 vintage was characterized by a less cold and rainy winter than usual, with a snow event in mid-February, followed immediately by an early heatwave in March. The lack of cold spells in the winter affected the productivity of the vines, and slightly reduced the yield. The summer was relatively comfortable, without extreme heat events. The harvest began two weeks earlier than usual, from mid-July to the end of September.

The wine was fermented and was aged on its yeast for 8 months in a combination
of cement amphorae, large wooden vats (500 ltr. acacia wood), and stainless-steel
vats.
The wine was bottled in April 2021.

2020 Vintage:
The 2020 vintage was characterized with a cold winter, higher than average precipitation (370 m”m).
The second part of winter experienced heavy rainfall and severe cold spells.
Extreme heatwave for around two weeks in the spring, parallel to the blooming
period of most red varieties.
Comfortable summer, no extreme waves of heat.
Temperatures were higher than average at the end of August and early September,
at the same time as the harvesting of most of the red varieties.
Continuous and excellent ripening. Overall, the harvest began slightly later than
average, commencing in the second week of August, and ending at the end of
September.

2019 Vintage:
The 2019 vintage was characterized with a cold winter, average rainfall (219 mm). March was colder and rainier than usual.
Extreme spring climate – a small amount of damage took place whilst in bloom, with a heatwave leading to a greatly reduced the yield.
Comfortable summer, no extreme heat events.
A continuous and high-quality ripening. Overall, the harvest, which was slightly later than average, began in the second week of August, and ended at the end of September.
